Wash the apples, cut in half, remove the seeds and slice thinly.
Tip: Soak the apple slices in lemon juice infused water for 2-3 mins to avoid browning. It also softens the apples, making it easier to bend the slices.
Roll out the puff pastry to 1/8-inch thickness into a rectangular shape and cut it into 2-finger width strips. Lay the apples on one side of the strip then fold the pastry in half lengthwise.
Starting one end roll up the strips to form a rose shaped pastry, give it an egg wash and sprinkle with cinnamon.
Place the roses in a lightly greased muffin tray and bake in a preheated oven at 356 °F (180°C) for 20-25 mins.
Once cooled sprinkle with icing sugar and serve.
