Have all your ingredients ready and let’s begin! Put the diced celery in a pot. Add water until you can’t see the celery, boil until tender.
Melt butter and braise onions in it.
Toast flour with it.
Add water and cook until thick.
Add to softened celery and boil for a few minutes.
Use a hand blender until creamy.
Add cooking cream.
