Have all your ingredients ready and let’s begin! First, melt the butter.
Toast it with flour.
Add diced cheese and let it melt.
Season with pepper and nutmeg. Add 3½ oz of broth.
Use a hand blender until creamy.
Add rest of the broth and use hand blender again.
Add cream and bring to a boil.
Serve with grated cheese, toast or soup balls.
