Have all your ingredients ready and let’s begin! First, wash and peel the potatoes, add to salted, boiling water. Crush thoroughly and let it cool down.
Combine eggs, salt, crushed or diced garlic and flour. Knead until tender.
Form small (½ inch) rolls on a slightly floured surface and cut into ½-1 inch long pieces.
Add to boiling water for a few minutes. When the knocchis rise to the top of the water, bring out and drip with oil.
For the cheese sauce:
Melt butter in a pan, add flour and stir for 1-2 minutes.
Gradually add milk, bring to a boil and let it thicken.
Season with salt, pepper and nutmeg.
Add yolks and cream.
Add the cheese in portions, keep stirring and let it melt.
