Gather your ingredients.
Wash the eggplant, cut in half lengthwise and scoop out the seeds.
Heat the oil in a saucepan and sauté the onions and the garlic, then add the minced meat and cook it until the meat is browned.
Once the meat is browned add the tomato juice and season with salt and oregano.
Preheat the oven to 200°C (390°F). Fill the eggplants with the minced meat sauce.
Sprinkle with grated cheese.
Bake in the preheated oven for about 20-25 mins until the cheese is golden.
