Gather all the ingredients.
Using a sharp knife cut the meat every 1 inch. Make sure not to cut all the way through to the bottom, to create small pockets.
Combine the crushed garlic, herbs, and spices with olive oil. Brush the meat with the mixture. Be extra generous with the small pockets.
Fill the pockets with a thicker slice of cheese, sliced bacon, onion rings and bell pepper strips.
Finally sprinkle with finely chopped parsley.
Line a deep roasting tray with tin foil. Place the meat in the middle, add a little water and cover with tin foil.
Roast at 180°C (356°F) for 50 mins.
Remove the foil for the last 10 mins so it gets a nice colour.
