Milky Way recipe: Preparing Milky Way is easy! For the nougat layer, pour grape sugar and 1/2 cup of water into a large saucepan, and bring it to boil.
When it has boiled, add sugar and 2/5 cup water, then heat it to 285-290°F.
In the meantime, beat the egg whites with vanilla sugar and salt. Make sure you don’t beat it completely, just until it begins to stick to the whisks of the hand mixer.
Pour the nougat base into the cream, while constantly mixing at a low speed. Then mix it at maximum speed, until it becomes massive and sticky.
Add chopped milk chocolate to the nougat, and blend it completely.
Pour the cream into a baking form lined with parchment paper. Leave it to set in the freezer for at least 4 hours.
When it’s set, pour melted milk chocolate on the top to fixate the cream so that it stays in place. Let the chocolate layer set completely.
Remove the baking form, and turn the chocolate over. Pour it with 10 1/2 oz melted milk chocolate. Use a knife and form the top of the chocolate, by drawing ‘x’ shapes. Let it rest in the fridge, and when it’s set, the Milky Way is ready to serve!
