Mars recipe: Preparing Mars is easy! For the shell, line a long baking form with plastic wrap, and coat it with 7 oz melted milk chocolate. Then put it in the fridge to set.
For the caramel layer, pour granulated sugar, grape sugar, whipping cream and water in a large pot, then melt it over high flame, while constantly stirring.
When it has melted, heat the caramel to 245-250°F.
Pour the still hot caramel into the stiff chocolate shell, then put it back in the fridge to set.
For the chocolate nougat layer, pour granulated sugar, grape sugar and water into a saucepan, then melt it, while constantly stirring.
When it has melted, heat the syrup to 300-305°F.
In the meantime, beat the egg whites, vanilla sugar and salt into a light foam.
Add the hot syrup to the foamy eggs, while blending it continuously at a high speed. Blend them until a sticky, foamy nougat forms.
Add chopped milk chocolate to the cream, blend it, and let it melt into the cream.
Pour the cream on top of the stiff caramel layer, then put it back in the fridge to set.
Cover the top with 3 1/2 oz melted milk chocolate. Put it back in the fridge to set.
When the chocolate cover hardens, remove the baking form and plastic wrap, and turn the chocolate over. Pour the remaining 10 1/2 oz melted milk chocolate on the chocolate. If you want to, grab a spoon and make wavy shapes in the the top layer. Put it back in the fridge to set completely.
