Whip the egg whites until they form stiff peaks. While whipping them up, add the sugar continuously.
Separate about a ladle of egg whites from the whole and place it in a separate bowl.
Add the egg yolks and the tbsp of flour to the smaller portion of egg whites. Then pour it into a piping bag. Pour the larger portion of egg whites into another piping bag.
Line a tray with baking paper. Pipe three lines of the simple egg whites onto it, which are right next to each other. Then pipe the egg yolk mixture onto these as shown on the picture.
Then pipe three new lines of the egg whites onto the egg yolks.
Sprinkle powdered sugar over it before popping them into the oven. Bake them for 35 minutes at 340°F. Then bake them for another 35 minutes, with the oven’s fan turned on.
While they are still hot, flip them on their backs. Spread apricot jam on them and then place them on top of each other. Let them rest for a while.
Slice it up before serving!
