Start by making the crust of the pie. Mix together the dry ingredients in a bowl.
Crumble the butter into the dry ingredients and mix in the egg. Knead until you have a smooth dough.
Let the dough rest in the fridge for 1 hour.
Roll out the dough and place it into a buttered and floured pie pan. Bake for 20 minutes at 355°F.
Move onto the lemon filling. Warm up the milk with the sugar, lemon zest, lemon juice and egg yolks. Mix everything together and cook until it thickens.
After the lemon filling has cooled to room temperature, mix in the butter.
Beat together the egg whites with the sugar, until stiff peaks form.
Spread the lemon filling on the already-baked crust. Then spoon the egg whites on top of it as well.
Bake the pie for 10-15 minutes at 320°F. Let it rest after baking, and it will be ready to cut up and serve!
