Mix together the dry ingredients of the carrot cake in a large bowl.
Add in the grated carrots and the flaxseeds that have to be soaked in water beforehand. Let the ingredients sit for a while so that the carrots add their moisture to the batter. If the batter isn’t moist enough afterwards, add a bit of plant-based milk to it!
Bake two sheets of cake for 30 minutes each at 355°F.
Then move on top make the filling and topping of the cake. Mix together the powdered sugar, lemon juice, vinegar, melted butter and vanilla aroma.
Spread the filling between the cake sheets, as well as on top of the cake!
Decorate the top with walnuts and it’s ready to slice and serve!
