Mix together the flour with the powdered sugar and baking powder.
Blend in the cold butter into the flour and create a ball of dough. If the dough is very crumbly then add a bit of rice milk to it.
Let the dough rest in the fridge for 1 hour.
Roll out the dough into a thin layer. Using a Linzer-shaped cookie cutter to cut out the cookies.
Bake them for 10 minutes at 355°F.
After they are baked, spread jam on the cookies that don’t have a hole in the middle. Then cover them with the cookies that have holes in them. Sprinkle powdered sugar over them.
