It’s important that you only use healthy, undamaged, thoroughly washed vegetables! Slice or grate the cabbage into thin pieces and place them in a large bowl.
Sprinkle plenty of salt over it, then let it sit for an hour, allowing the cabbage’s excess water to come out.
Start making the vinegar base. Add the sugar, the tartar, baking soda, salt, coriander seeds, black peppers and mustard seeds to a large pot. Then pour the vinegar and water in it as well. Bring the base to a boil and then let it cool completely.
Cut off the tops of the bell peppers and take out the seeds. Fill them with the cabbage, which has had it’s excess moisture removed and squeezed out.
Place them into jars, stacking them on each other. Pour the vinegar base over them, filling it up to to the top. Wait for 1-2 hours before shutting the jars tightly with their lids.
