Start by making the pastry for the baskets. Mix together the dry ingredients.

Crumble in the butter, then mix in the sour cream and egg yolks to form a ball of dough.

Move onto the filling. Whip up the egg whites together with the powdered sugar, until they form stiff peaks. Then gently fold in the shredded coconut.

Press the dough into pastry basket molds that have already been buttered and floured.

Add a spoonful of apricot jam to the bottom of each pastry basket. Then spoon some coconut filling on top.

Bake for 30 minutes at 355°F.

Sprinkle powdered sugar on top of the baskets when they’re done!
