RECIPE

Ingredients

1 lb minced meat of your choice (turkey, chicken, pork, beef, lamb)
10 oz grated cheese
1 onion
1 bigger eggplant
2 cloves of garlic
10 fl oz tomato juice
2 tablespoon olive oil
2 teaspoon oregano

Steps

Step 1
Gather your ingredients.
Step 2
Wash the eggplant, cut in half lengthwise and scoop out the seeds.
Step 3
Heat the oil in a saucepan and sauté the onions and the garlic, then add the minced meat and cook it until the meat is browned.
Step 4
Once the meat is browned add the tomato juice and season with salt and oregano.
Step 5
Preheat the oven to 390 degrees F. Fill the eggplants with the minced meat sauce.
Step 6
Sprinkle with grated cheese.
Step 7
Bake in the preheated oven for about 20-25 mins until the cheese is golden.
