Ingredients

Dough:
100g dark chocolate
1 tbsp sunflower oil
175 g brown sugar
2 eggs
100 g butter
20 g cocoa powder
80 g all-purpose flour
1 tsp baking soda
1 pinch of salt
1.5 tbsp black coffee
Cream:
500 g mascarpone
150 ml whipping cream
100 ml milk
5 tbsp powdered sugar
10 g gelatin
1.5 tbsp instant coffee
100 ml water
For the Top:
2 tbsp cocoa powder

Steps

Step 1
Whisk together the eggs with the brown sugar, then add the soft butter and incorporate it.
Step 2
Sift in the flour, cocoa powder and baking soda, mixing everything together with a hand mixer.
Step 3
Pour chocolate melted and coffee into the mixture as well and combine them into the base.
Step 4
Line a baking tin with baking paper. Pour the filling into the baking tin and bake it for 20 minutes at 355°F. Then let it cool completely.
Step 5
Move onto the cream. Whip the mascarpone together with the powdered sugar, then slowly mix in the cream and the milk as well, stirring continuously.
Step 6
Add the gelatin into the cream, which was mixed into instant coffee and water beforehand.
Step 7
Spread the cream evenly on top of the cake base, that has already cooled down.
Step 8
Let it rest in the fridge overnight. Then it’s ready to slice and serve the next day! You can sprinkle cocoa powder on the top.
