Separate the egg whites from the yolks and whip the whites until thick.
Beat the yolks with sugar until foamy.
Add flour, cocoa powder, cooking powder, cinnamon, water, oil and two tablespoons of the whipped egg whites.
Carefully add the rest of the egg whites.
Spread the mixture in a buttered and floured middle-sized pan and bake on 360 degrees F for about 15 minutes.
Start whipping the cream. When it starts increasing, add gelatin fix.
Add powdered sugar and vanilla flavoring, beat until thick.
Cut the dough in half.
Spread half the cream on one side of the dough and let it rest for 15 minutes.
For the chocolate filling, combine butter with oil.
Add and melt grated chocolate. Let it cool down at room temperature.
Spread it on the cream and let it stiffen.
When the chocolate is stiff, spread the rest of the cream.
Place the other dough layer on top.
Cover with melted chocolate.
Let it stay in a cold place until serving.
