Walnut Mushroom Cookies recipe: Preparing Walnut Mushroom Cookies is easy! For the caps, mix flour, powdered sugar and baking powder in a larger bowl, then put it away for a while.
In an other bowl, mix egg, egg yolk and melted butter with a hand whisk.
Add the flour mixture to the eggs, and mush them together.
Form the dough into small balls and place them on a baking sheet, lined with parchment paper. Bake for 15 minutes at 355°F in a preheated oven.
Before the caps cool down, scrape out the centers with a spoon and put the crumbs away for a while.
For the stems, mix walnut meal with baking powder.
Mix egg, butter and sugar with a hand whisk, then add the walnut meal mixture and mush them together.
Form the walnut dough into small logs and place them on a baking sheet, lined with parchment paper. Bake for 15 minutes at 355°F.
For the filling, mix the cookie crumbs with apricot jam, walnut meal, cocoa powder and rum (or rum essence) in a larger bowl.
Fill the caps with a bit of filling, then gently stick a stem into the center.
Dip the mushroom caps in melted dark chocolate, and let it harden.
