First, soak the gelatine sheets in 100 ml water for a few minutes. Then heat them up with 150 ml water and put aside.
To create the filling, mix the cottage cheese up until fluffy, then add vanilla sugar, lemon zest and a bit of powdered sugar to it.
Add the gelatine to the cottage cheese mixture, place in the fridge and let it rest for an hour.
After it has rested, roll up small rods of cottage cheese mixture in clingwrap. Place them in the freezer for 2 hours.
Unwrap the cottage cheese snacks and cut them into smaller pieces. With quick movements, dip them in melted dark chocolate, making sure they are covered all over. Place them onto a sheet of baking paper and let them set.
Then they are ready to serve and eat!
