The Carrot cake is the perfect dessert recipe for Easter!
Combine oil with brown sugar.
Add eggs one by one.
Combine grated walnuts, flour, baking powder, cinnamon and salt.
Add the sugary mixture.
Add vanilla flavoring, melted chocolate, orange rind and grated carrots.
Spread the mixture in a buttered and floured pan, bake at 340 degrees F in a fan oven for an hour.
Let it cool down completely when ready.
Combine mascarpone, vanilla sugar and grated cheese for the frosting.
Cover the top of the cake with frosting.
