Mix together the egg yolks and the melted butter.
Add vanilla sugar and cane sugar to it and combine everything well.
Pour in the milk and mix it in.
Line your baking tin with baking paper. Place your slices of buns next to each other after you have soaked them in the egg and milk mixture.
Spread apricot jam on the top.
Mix your ground walnuts with the cane sugar and sprinkle it over the apricot jam.
Then place a new layer of soaked bun slices on top of the ground walnuts. Bake them for 10 minutes at 355°F.
Whip up the egg whites with the sugar until they form stiff peaks.
Mix in a bit of apricot jam as well, blending everything together! Pour the egg whites into a piping bag.
Pipe the egg whites on top in droplets next to each other. Bake your bread pudding for another 10-15 minutes at 355°F.
Let it rest for a little before slicing it up and serving it!
