Start with the base. Grind your oatmeal cookies and stir them together with the melted butter.

Line a cake tin with baking paper. Spread the base in it, making sure that it’s about the same thickness everywhere. Place it in the fridge for 1 hour and allow it to rest.

Move onto the cheesecake’s cream. Whisk together the eggs with the sugar and vanilla sugar, until fluffy.

Mix the mascarpone into the mixture as well, making sure it’s well combined. You should have a denser cream, which is easily spreadable.

Add the lemon juice and lemon zest to the cream as well, to give it a fresh flavour.

Pour the cream onto the base and bake it for 35 minutes at 355°F. Let it cool before placing it in the fridge to rest overnight.

For the caramel sauce, melt sugar in a pot and add a pinch of salt to it, then pour the cream into it. Watch out while you add the cream, as the sugar might start to spatter out and it can create serious burns.

Allow it to cool down before pouring it on top of your cheesecake. Let it set before you slice it up for serving!
