RECIPE

Ingredients

10 ½ oz brown sugar
7 fl oz cooking oil
4 eggs
10 oz wheat flour
3 ½ oz walnuts
2 ½ tsp baking powder
1 tsp cinnamon
14 oz grated carrots
1 pinch of salt
1 ½ oz melted white chocolate
Zest of 1 orange
Frosting:
7 oz plain cream cheese
1 tbsp vanilla flavoring
Cake pan (26cm/ 10inch)
3 tbsp of grated carrots

Steps

Step 1
Combine the oil with brown sugar.
Step 2
Add the eggs one by one.
Step 3
Combine the grated walnuts, flour, baking powder, cinnamon and salt.
Step 4
Add it to the sugary mixture.
Step 5
Add vanilla flavouring, melted chocolate, orange zest and grated carrots.
Step 6
Spread the mixture in a buttered and floured pan, bake at 340 degrees F in a fan oven for an hour.
Step 7
Let it cool down completely when ready.
Step 8
Combine mascarpone, vanilla sugar and grated carrots for the frosting.
Step 9
Cover the top of the cake with frosting.
Step 10
Decorate your cake.
