First of all, start off with the marinade. Mix together the olive oil, lemon juice, ground chilli, ground cumin and the salt in a bigger bowl.
Place the boneless chicken thighs in the marinade. Make sure the chicken thighs are covered in the marinade, and let them rest for 60 minutes.
After letting them rest for an hour, cook the chicken in a pan that you will be able to place into your oven later.
After the chicken has been cooked, take them out and put aside. After chopping up the onions and bell peppers cook them as well until they wilt.
Make a bit of room inside the pot, and pour in the rice, the chicken stock, a bit of salt, pepper and ground cumin. Stir together and allow the mixture come to a boil. The rice should absorb all the liquid.
If the rice is ready, place the chicken thighs in the pot as well. Cover the pot with foil and put it into the oven. After baking it for a while it’s ready to serve!
