Start by making the base of the cake. Combine the butter, vanilla sugar, powdered sugar and eggs until they are fluffy.
In a separate bowl, mix together the flour and the baking powder. Then add it to the other mixture and after that, add the milk as well.
Pour the mixture into a baking pan which has already been lined with baking paper. Spread the apricot jam all over the top of it, then put it in the oven for 25 minutes at 355°F.
Whip up the egg whites together with the sugar, then fold in the shredded coconut.
Spread the egg whites on top of the already baked cake. Then pop it back in the oven for another 10 minutes at 300°F.
After the cake has cooled a bit, it’s ready to slice up and serve! You can decorate it by drizzling melted dark chocolate over its top.
