Start off by making the cake dough. Firstly, mix together the dry ingredients.
Stir in the egg yolks and the butter. You should be able to form a ball of dough.
Cut the dough into two halves and roll them out into the size of your cake pan.
Move onto the cream. Whip up the egg whites with the powdered sugar, then carefully add the shredded coconuts to it as well.
Place one of the sheets of dough in the bottom of your cake pan. Spread the cream over it and place the second sheet of cake dough on it. Bake it for 35 minutes at 355°F.
For the top, whisk together the egg yolks, powdered sugar and rum aroma, until it becomes fluffy and frothy.
While the cake is hot, take it out of its pan. Spread the cream over the top and let it rest for at least an hour before serving.
Cut it into long slices!
