Start off with the sponge cake, mix together all of the ingredients for it besides the egg whites. Whip up the egg whites in a separate bowl.
Fold in the egg whites into the sponge batter gently.
Pour the batter into a cake pan. Bake it for 25-30 minutes at 355°F.
To make the cream mix together the egg yolks with some milk over low heat. Then add the vanilla aroma, sugar, flour, cornstarch and rest of the milk. Let it thicken, then take it off the heat.
Mix in the butter into the cream mixture, to create a fluffy and smooth texture. Separate it into two parts and add the instant coffee to one of the batches.
When the sponge has cooled, spread the plain cream on it first. Then spread the coffee cream on it. Let it rest overnight.
Slice up the cake the next day and it’s ready to serve!
