Firstly, beat together the eggs and sugar until fluffy.
Add the flour, baking powder and cocoa powder to it, until smooth.
Line a baking tin with baking paper and pour the batter into it. Bake it for 10 minutes at 355°F.
Spread apricot jam over the cake and place it aside.
Cook your caramel pudding, out of the pudding powder, milk and sugar, then let it cool completely. Mix in the mascarpone and instant coffee powder.
Spread the cream over the top of your cake.
Whip up the cream and thinly spread it on top of the pudding layer. You can decorate it further by piping out the rest of the whipped cream.
