Braise the onion and bacon in a frying pan for about 10 minutes. 
Add the baby spinach to it, allow it to wilt while stirring continuously. When wilted, put aside. 
Pound the chicken breasts into thin slices, and on cling-wrap stick them together. Season them with salt and pepper. 
Then place pieces of ham and cheese over them. 
Spoon out the spinach mixture onto the middle of the chicken breasts. 
Roll up your chicken with slow and precise movements, use the cling-wrap for help. Put it in the fridge or freezer for at least an hour. 
After taking out the chicken, coat it in flour, eggs and breadcrumbs. We suggest coating it twice. 
Bake it at 190°C for 40 minutes. Slice it up after taking it out of the oven and you can already serve it!
