Start off with the pastry. Combine the egg yolks, the white sugar and the butter. Mix well. Then add the flour and baking powder. Use an electronic mixer for this procedure so your pastry won’t be lumpy.

Grease a baking pan with butter and powder it with flour – so the pastry won’t stick to the pan. Pour the pastry mixture in the pan and spread it evenly everywhere. Bake it for 20 minutes at 170°C.

Beat up the egg whites, while consistently adding small amounts of white sugar. Use a mixer for this as well.

–-After your pastry is done, spread apricot jam all over the top of it. Then spoon the egg on as well, spreading this evenly across the pastry. Pop it back into the hot oven for 5-10 minutes.

When finished, cut it up into slices and enjoy!
