Start by making the cookie dough. Mix together the ground hazelnuts, baking powder, pinch of salt and powdered sugar. Mix everything well.
Add the butter and incorporate it into the mixture.
Then add the zest and juice of the orange, as well as the 2 egg yolks and 1 egg. Using your hands create a ball of dough.
Let it rest in the fridge for 30 minutes.
After letting it rest, roll it out and cut out the tops and bottoms of your cookies, using a cookie cutter. Make sure that the top parts have holes in the middle of them.
Line a baking tray with baking paper. Place your cookies on the tray. Whip up the egg whites and with the help of a piping bag, pipe the meringue out onto the cookies which have holes in the middles. Bake them for 8-10 minutes at 355°F.
Take them out of the oven and let them cool completely. Sprinkle powdered sugar over the cookies which have holes in the middle. Spoon apricot jam in the middle of the cookies which don’t have holes in them, then stick together the two halves of the cookies. Let them rest for a bit before serving!
