Beat the egg yolks with the sugar until fluffy. Then add the water, oil, both flours and the baking soda.

While stirring, also add the cocoa powder to the batter.

Whip up the egg whites and fold them into the batter. Pour it into your cake pan which is already lined with baking paper. Bake for 15 minutes at 355°F.

For the Parisian cream melt the dark chocolate together with the whipping cream. Let it cool completely.

Blend the butter with the powdered sugar and stir in the dark chocolate cream. Then put it in the fridge to rest.

Move onto the cottage cheese layer. Mix the cottage cheese with the powdered sugar and vanilla sugar, then place it in the fridge.

Next comes the sour cherry layer. Pour the sour cherries into a pot along with their juice, but take out 200 ml of the sour cherry juice which you mix together with cornstarch. Add the sugar to the sour cherries and bring them to a boil. Then mix in the 200 ml juice into the boiling pot of sour cherries. Heat until it thickens. Then let it cool.

Now all you need to do is put the cake together! Spread the cottage cheese layer on top of the sponge cake. Then comes the layer of sour cherries and finally, the Parisian cream. Let it rest in the fridge until you serve it.

You can shave some chocolate and sprinkle it on the top!
