First of all, mix together the dry yeast with the warm water and sugar. Let it rest for 10 minutes.

Sieve the flour and a pinch of salt into the yeast mixture.

Pour in the warm milk, the melted butter and the 2 egg yolks. Mix well, first with a wooden spoon. Then with your hands, kneed the dough, until you have a fluffy texture.

When the dough is ready, pour a bit of olive oil into the bottom of a bowl. Place the dough in the bowl, cover it with a cloth and put aside for an hour of so, for it to grow.

If the dough is ready, kneed it through again. Then split the dough into smaller portions. Stretch out the dough into strings. Out of aluminium foil make small cones. Twist the strings of dough around the foil cones, so that the cone is covered from top to bottom.

Place the cones upside-down, in a muffin baking tray, and wash their outsides with egg yolks. Pop them in the oven and bake them at 190°C for 20 minutes until they are golden.

When they are ready, pull out the foil cones. Wash them over with melted butter and roll them around in cinnamon sugar.

Depending on your taste, you can get creative! You can pour melted chocolate over the chimney cakes, or sprinkle them with more sugar.
