A simple and light dinner! Try the Veggie Penne!
Heat some oil in a pan.
Cut the peppers, put them in the pan and cook it covered for 10 minutes.
Add the diced tomatoes.
Cover it for 5 minutes, then add the mushrooms, salt and pepper.
Cook it thorough and put some garlic and basil on it (optional).
Add the tomato sauce and cook it thorough.
Add the precooked pasta and mix it well.
Put the mozzarella on top and cover it so it melts.
