Start by making the cake batter. Whip up the egg whites together with the sugar until they form stiff peaks. Incorporate the butter as well.
Mix in the cocoa powder, flour, baking powder and ground walnuts.
Divide the batter into two parts, baking each separately for 10-15 minutes at 355°F.
Move onto the cream. Melt the vanilla sugar and sugar in your milk, then mix in the egg yolks.
Mix in the pudding powder as well as the flour.
Allow the mixture to thicken. When it has, take it off the heat and place it aside.
After the cream base has cooled, blend it together with the butter until it forms a creamy consistency.
Cut the cakes into halves. Spread the cream on them and stack the layers onto each other.
For the top, whip up the egg whites together with apricot jam and the sugar. Spread this on the top of your cake and let it rest for a bit. Then you’ll be ready to serve it!
