Start with the dough. Mix the flour and butter together.
Add the sugar, vanilla sugar, lemon zest, baking powder and a pinch of salt. Mix everything with a wooden spoon.
Then finally, add the egg yolks and sour cream. Create a smooth dough out of it.
Let the dough rest in the fridge for 30 minutes.
Roll out the dough and place it in a 30 x 20 cm baking tin, that has already been lined with baking paper.
For the walnut cream, whip up the egg whites with the powdered sugar until they form stiff peaks.
Add the ground walnuts and the cinnamon to it.
Gently stir everything together.
Spread apricot jam over the top of the dough, which is already in the baking tin.
Then spoon out the walnut cream on top of it, making sure to spread it evenly. Bake it in a convection oven for 20-25 minutes at 320°F. After taking it out of the oven, allow it to cool completely.
Cut the cake into slices and enjoy!
