Start off with the dough. Combine the butter with the flour and baking powder.
Add the egg yolk and the cold water, then use your hands to work the dough together, until it forms a smooth texture.
Form a small ball out of it and place it in the fridge to rest for 30 minutes.
Move onto the walnut sponge. Combine the sugar with the egg yolk and with the help of a hand mixer, combine until they are fluffy.
Add the cocoa powder, baking powder, salt and oil. Then finally, add the ground walnuts as well. Stir everything well.
Add the whipped up egg whites to the sponge batter, stir them in gently.
Line a square baking tin with baking paper. Spread the dough evenly across the bottom, using your hands to flatten it.
Spoon out some apricot jam onto the down and spread it evenly.
Pour the sponge layer on top of the jam, then bake it at 375°F until it’s ready. (You can check this out with a fork or a toothpick).
For the cream, mix the butter with the powdered sugar until fluffy.
Make your vanilla pudding, and after it has cooled down, add it to the buttery cream.
Pour the cream all over the top of your cake, which should have already cooled down.
Soak buttery cookies in milk and place them on top of your dessert. Place it in the fridge overnight and let it rest.
Cut the dessert up into slices, according to how the biscuits were laid down, and you are ready to serve it!
