Dissolve the ammonium carbonate in warm milk. Watch out, because it may over.
To make the pastry, mix together the flour, the eggs, the vanilla sugar, the white sugar, the sour cream, the honey, the vanilla sugar and a pinch of salt. Add the carbonate mixture to it, and stir it in as well.
Add the cold fat to it and start kneading the dough.
Separate the dough into 6 parts, each one should be the same size.
Roll out each dough ball into paper thin layers. Bake each one separately for 8-10 minutes at 200°C.
Move onto the cream. Melt the white sugar in a pan and add the butter to it.
While stirring continuously, add 1l of milk.
For the cream to thicken, add a bit of flour and cinnamon to the remaining 200ml of milk.
Spread the cream on each layer of pastry and pile them on top of each other. Put your cake in the fridge overnight. You can think about putting some sort of weight on top of it, so the layers are firmly pressed together, which will make the pastry easier to cut up the next day.
Melt the dark chocolate, and pour it over the top of the dessert. You can paint patterns with a fork in the chocolate.
