Activate your yeast in warm milk which contains some sugar.

Mix the flour with the powdered sugar.

Add the rest of the ingredients of the dough to the flour and combine well.

You should receive a dough which isn’t sticky but is well formable. It’s important to check out whether it doesn’t stick, as you won’t need any extra flour while rolling out the dough.

Pour the ground walnuts and poppy seeds into two separate bowls. Add 20 g of ground biscuits to both bowls.

Flavour the walnut filling with raisins and orange zest. Add lemon and orange zest to the poppy seed filling.

Warm up the granulated sugar with the water and bring it to a boil. Then mix the water into both fillings. Both fillings should be easily formable with your hands. If the fillings are crumbly, then add a bit more water.

Roll out each ball of dough and place a filling in them. Then roll them up.

Twist the two sides of the dough and pinch them down to create a crescent shape.

Coat the crescents with an egg yolk + egg. Wait until the egg wash dries on each crescent and put them into the oven for 10-15 minutes at 390°F.
