Start by making the dough for the Walnut Roll. Mix together the yeast with the milk and the 2 egg yolks. You don’t need to activate the yeast! Put it aside, as you start to mix the dry ingredients in a separate bowl.
Combine the flour, powdered sugar and a pinch of salt. Mix well, before mixing in the butter.
Pour in the yeast mixture and blend all the ingredients together to create a smooth dough. Cover it in cling wrap and place it in the fridge for 30 minutes.
Mix the ground poppy seeds with the lemon zest and orange zest, then add a bit of vanilla sugar and cinnamon as well!
Cook a syrup, out of 150 ml of water and 30 g sugar. Add a few cloves to it, for an extra punch of flavour. After it is done, pour it in little by little into the poppy seed mixture. Make sure that you only add as much syrup as much the poppy seeds need. You don’t want a runny texture, you want the poppy seed filling to be easily spreadable but dense.
Roll out the dough, making sure you powder your table beforehand with flour, to prevent the dough from sticking to it. Spread the filling on the dough. Fold each edge of the dough on top of the filling. Then you’re ready to roll up the dough.
You will have to coat the roll in egg yolk wash twice. After each coating, you have to let the roll rest in the fridge for 30 minutes.
Then coat it in eggwhite wash and let it rest in a warm spot for 30 minutes, allowing the dough to rise.
Line a baking tray with baking paper. Put it in the oven and bake it for 35-40 minutes at 330°F. After taking it out of the oven, let it cool completely. Then it will be ready to serve!
