Ingredients

1lb boiled potatoes
2 egg yolks
1 tsp salt
1 tsp pepper
1 ½ oz breadcrumbs
3 oz flour
Oil

Steps

Step 1
Preparing Potato croquettes is simple. First, boil the potatoes in skin, then peel them.
Step 2
Crush them with a potato ricer.
Step 3
Add egg yolks.
Step 4
Season with salt and pepper.
Step 5
Stir in the flour.
Step 6
Form about 2×1 inch rolls.
Step 7
Crumb the rolls in breadcrumbs.
Step 8
Cook the croquettes in hot oil.
