Potato scones recipe: Preparing the Potato scones is simple! First, boil your unpeeled potatoes. When done peel and mash them and let them cool.
Combine the potatoes with flour with softened butter/margarine.
Add the active yeast, eggs and salt.
Knead the dough.
Let it rise in a warm place until it doubles in size.
After that, roll out the dough, fold it up before rolling it out again.
Create some lines with a fork or knife on the top of the dough, before cutting out circles using a cookie cutter.
Brush the top of the scones with egg yolk. Bake at 360 degrees F for 20-25 minutes.
